Exactly because they mentioned the Enterprise in the last episode. So the trailer is misleading.

That's true, there is a lot they could potentially do with her character. I only assume they would contradict canon in some fashion because almost everything on the show already does.

I don't think it was ever said what happened to that character. We never even learn her name. I'm sure they have written about her in some of the books, but those aren't canon.

Nothing happened to her. It's Majel Barrett dude, Roddenberrys' wife. This episode was supposed to be the pilot. It was named "The Cage". Anyhoo, she dyed her hair blonde and became Nurse Chapel. She died in 2008. To that point, she was in everything Trek. Every show and every movie.
